Charcoal Grilled Ponzu Chili Chicken Wings

 

SERVES 4-6

 

2-3 pounds Chicken wings (flats and drumettes)

Salt

Pepper

Scallion chopped, whites and greens (for garnish)

Fresh cilantro leaves (for garnish)

BASTING INGREDIENTS:

1/4 cup honey

1/4 cup ponzu

1/4 cup soy sauce

1/4 cup rice wine vinegar

1 teaspoon crushed red chili flake

1 Tablespoons fish sauce

2 Tablespoons sriracha or chili sauce 

1/2 stick unsalted butter (melted)

 

While prepping the wings and sauce, fire up your Thaan Charcoal and dump hot coals into grill.

 

1. Combine the first 7 ingredients into a bowl and  whisk until incorporated. Drizzle in melted butter and whisk well, Set aside. 

2. Line cookie sheet with foil or parchment. Arrange wings on sheet and season with salt and pepper.

3. Once your coals and grill are hot, add wings to grill. Char on both sides and baste with sauce 1-2 times. The sugars in the sauce will quickly caramelize over the hot Thaan so watch your wings! 

4. When wings are fully cooked, place in large bowl. Pour remaining sauce over wings and toss to coat. 

5. Transfer coated wings to plates or platter and garnish with chopped scallions and fresh cilantro (and more sauce if you want) — we fully support some blue cheese dressing as a dipping side too! ENJOY!
