What Is Extruded Binchotan?

Extruded binchotan is charcoal compressed under high pressure into dense, uniform logs instead of being fired whole in a traditional kiln. Thaan Thai-Style Charcoal is extruded from reclaimed Thai orchard fruitwood to binchotan-grade density, so it runs up to 1200°F with almost no smoke, a low ash bed, and a 4 to 6 hour burn.

How extruded binchotan is made

Real Japanese binchotan starts as whole oak branches, fired in a kiln for weeks, then buried in a mix of sand and ash to cool. The wood comes out so dense that two pieces knocked together ring like ceramic. It is a beautiful process and a slow one, and the price reflects both.

Extrusion takes a different road to the same density. The wood gets carbonized first, then ground to a uniform size and screened. That carbon is mixed with tapioca starch and water into a paste, and the paste is forced through a die at around 14,000 pounds per square inch. It comes out a dense log, cut to length, then dried in a kiln to pull back out the water the slurry put in.

The pressure is the part that matters. That kind of force closes the structure down into binchotan territory, and it is why the log is the same all the way through instead of dense in one spot and airy in another the way a natural branch is. The hole down the middle pulls air through the center, so the log catches from the inside and burns evenly instead of working its way in from the outside.

Ours starts as rambutan hardwood, trimmed from Thai fruit orchards and reclaimed from what used to get burned as waste. The binder is tapioca starch, which is what holds the log together through pressing and drying. That is the whole list. No filler, no accelerant, no sawdust swept in from somewhere else.

Extruded is not the same as a briquette

Plenty of charcoal sold as an extruded log is mixed hardwood dust from wherever, pressed into shape and sold on the silhouette. Same log, same hole down the middle. In the grill it is a different animal.

The difference is what goes in and how hard it gets pressed. Ours is carbonized rambutan orchard wood, one species, screened to a uniform size, then compacted at 14,000 psi. Mixed dust pressed at lower pressure comes out a looser log, and density is the whole ballgame for how a fire behaves.

Those looser logs throw real smoke. That is exactly what you want when you are filling a firebox for a twelve hour brisket, and they are cheap by the pound, so no argument from us there. They also leave a thick ash bed. If you have ever run a konro through a long service and watched your heat fade halfway because the ash choked your airflow, you know that feeling. Getting a log to binchotan-grade density changes all of that: high heat, clean burn, and an ash bed you can mostly ignore.

Where extruded binchotan falls short

Extrusion does not give you the ring. That bell sound comes from the way binchotan gets cooled in the kiln, and we cannot reproduce it. If that sound is part of why you love the stuff, we understand.

It does not give you the history either. Binchotan carries centuries of Japanese craft behind it. A compressed log from a Thai orchard is a different thing with a different story, and we would rather own that than borrow it.

What extrusion does give you is everything that shows up on the plate: the heat ceiling, the clean neutral burn, the low ash, the long steady session. Cook the two blind and the fires are hard to tell apart.

What to cook over it

Yakitori and konro work, where a narrow bed of charcoal has to hold through a long run of skewers without you rebuilding the fire mid service. Searing, where you want the crust set before the middle goes past where you meant to take it. Hibachi. Anything where the fuel should stay out of the way and let the food and the fire do the talking.

If you are after heavy smoke for an all day brisket, grab a hardwood briquette instead. Different fuel, different job.

Is it sustainable?
The wood is orchard trimming from Thai rambutan farms, a byproduct that used to get burned as waste. We buy the offcut.
